การพัฒนากะปิลดโซเดียมโดยการทดแทนโซเดียมคลอไรด์ด้วยโพแทสเซียมคลอไรด์สำหรับวิสาหกิจชุมชน ตำบลท่าเคย อำเภอท่าฉาง จังหวัดสุราษฎร์ธานี

บทคัดย่อ
งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนากระบวนการผลิตกะปิและกะปิผงลดโซเดียม โดยการทดแทนโซเดียมคลอไรด์ (NaCl) ด้วยโพแทสเซียมคลอไรด์ (KCl) ร่วมกับสารปรับแต่งรส เพื่อยกระดับผลิตภัณฑ์ของวิสาหกิจชุมชนตำบลท่าเคย อำเภอท่าฉาง จังหวัดสุราษฎร์ธานี กะปิผลิตโดยใช้สัดส่วน NaCl:KCl เท่ากับ100:0, 75:25, 50:50 และ 0:100 เติมทอรีนร้อยละ 1 และกรดแอสคอร์บิกร้อยละ 0.1 และหมักเป็นเวลา 180 วัน ผลการศึกษาพบว่า กะปิมีร้อยละผลผลิตประมาณร้อยละ 50 ปริมาณความชื้นอยู่ในช่วงร้อยละ 45–50 ค่า water activity เท่ากับ 0.70–0.80 ค่า L*, a* และ b* มีแนวโน้มลดลงตามระยะเวลาการหมัก และค่า pH ลดลงเล็กน้อยจาก 8.0 เป็น 7.7 ปริมาณโซเดียมอยู่ในช่วง 730–895 มิลลิกรัม/หน่วยบริโภค (15 กรัม) โดยสูตร NaCl:KCl ระดับ 50:50 ได้รับการยอมรับทางประสาทสัมผัสและสามารถลดโซเดียมได้ร้อยละ 47 เมื่อเทียบกับกะปิท่าเคยอ้างอิง เมื่อนำไปพัฒนาเป็นกะปิผงลดโซเดียมโดยการอบแห้งที่อุณหภูมิ 60 °C เป็นเวลา 8 ชั่วโมง พบว่ามีความชื้นร้อยละ 4.70 ค่า water activity เท่ากับ 0.38 และมีปริมาณโซเดียม 530 มิลลิกรัม/หนึ่งหน่วยบริโภค (9 กรัม) หรือลดลงร้อยละ 52 ผลิตภัณฑ์มีคุณภาพด้านจุลินทรีย์เป็นไปตามมาตรฐาน และสามารถกล่าวอ้างเป็นผลิตภัณฑ์ “โซเดียมลดลง” แสดงถึงศักยภาพของการประยุกต์เทคโนโลยีอาหารเพื่อการพัฒนาผลิตภัณฑ์ชุมชนอย่างยั่งยืน
