การศึกษาสมบัติของสารเอนแคปซูลน้ำมันหอมระเหยเปลือกส้มเพื่อนำไปใช้ในผลิตภัณฑ์คุกกี้

บทคัดย่อ
การศึกษานี้มีวัตถุประสงค์เพื่อสกัดน้ำมันหอมระเหยจากเปลือกส้ม 3 สายพันธุ์ ได้แก่ ส้มฮันนี่ สายน้ำผึ้ง และ สีทอง ในรูปแบบสดและแบบแห้งด้วยวิธีการกลั่นด้วยไอน้ำ พบว่าเปลือกส้มสายน้ำผึ้งอบแห้งให้ผลผลิตน้ำมันสูงที่สุดเท่ากับ 3.47% เมื่อเปรียบเทียบกับตัวอย่างสดและสายพันธุ์อื่น เมื่อนำมาเอนแคปซูเลชัน ร่วมกับสารห่อหุ้มแบบผสม 3 ชนิด ได้แก่ มอลโตเด็กซ์ตรินผสมกัมอะราบิก (MD10:GA) มอลโตเด็กซ์ตรินผสมซอยโปรตีนไอโซเลต (MD10:SPI) และมอลโตเด็กซ์ตรินผสมเวย์โปรตีนไอโซเลต (MD20:WPI) อัตราส่วน 1:1 ผสมกับน้ำมันหอมระเหยในอัตราส่วน 4:1 และทำแห้งแบบแช่เยือกแข็ง จะได้เอนแคปซูล MD10:GA มีประสิทธิภาพการเอนแคปซูเลชันสูงที่สุดเท่ากับ 84.90% (p<0.05) ปริมาณน้ำอิสระ 0.27 ความหนาแน่นรวม 0.24 g/cm3 และความหนาแน่นแบบอัดตัวต่ำที่สุดเท่ากับ 0.32 g/cm3ปริมาณน้ำมันในเอนแคปซูลสูงที่สุด 0.74 g/100 g (p<0.05) นำไปวิเคราะห์การเปลี่ยนแปลงสมบัติทางกายภาพ เคมี และจุลินทรีย์ ตลอดระยะเวลา 3 สัปดาห์ พบว่าคะแนนด้านสี กลิ่น และความชอบโดยรวมไม่แตกต่างจากสูตรควบคุม ในขณะที่คะแนนลักษณะปรากฏและเนื้อสัมผัสลดลงเมื่อเพิ่มปริมาณเอนแคปซูล (สูตรที่ 3) เป็นปริมาณที่เหมาะสมที่สุด การศึกษาความคงตัวของเอนแคปซูลระหว่างการเก็บรักษาที่อุณหภูมิ 25 และ 35 องศาเซลเซียส นาน 4 สัปดาห์ พบว่าปริมาณน้ำมันลดลง ในขณะที่ปริมาณน้ำอิสระและค่าความเป็นกรด (acid value) เพิ่มขึ้นอย่างต่อเนื่อง โดยอุณหภูมิ 35องศาเซลเซียส ส่งผลให้การเสื่อมคุณภาพเกิดได้เร็วกว่าที่ 25 องศาเซลเซียส การเสริมเอนแคปซูลน้ำมันหอมระเหยลงในผลิตภัณฑ์คุกกี้ 5 ระดับ ได้แก่ สูตร CK1 (สูตรควบคุม ไม่เสริมเอนแคปซูล) สูตร CK2 (เสริมเปลือกส้มสด) สูตร CK3 (เอนแคปซูล 5 กรัมต่อคุกกี้ 100 กรัม) สูตร CK4 (เอนแคปซูล 10 กรัมต่อคุกกี้ 100 กรัม) และ สูตร CK5 (เอนแคปซูล 15 กรัมต่อคุกกี้ 100 กรัม) เก็บรักษาผลิตภัณฑ์ในบรรจุภัณฑ์พลาสติกโพลีเอทิลีนภายในถุงอลูมิเนียมฟอยล์แบบซิปที่อุณหภูมิ 25 องศาเซลเซียส นาน 3 สัปดาห์ พบว่าค่าความสว่าง (L*) ความเป็นสีแดง (a*) ความเป็นสีเหลือง (b*) ลดลงเมื่อเปรียบเทียบกับสัปดาห์แรก ค่าความแข็งและค่าการแตกออกจากกันเพิ่มขึ้นตามปริมาณเอนแคปซูลที่เพิ่มขึ้นและมีแนวโน้มลดลงตลอดระยะเวลาการเก็บรักษา คุกกี้สูตร CK5 มี TBA ต่ำที่สุด เท่ากับ 13.72±0.19 mg MDA/100 g ในสัปดาห์ที่ 3 ตรงข้ามกับสูตร CK1 ที่มีแนวโน้มเหม็นหืนสูงที่สุดระหว่างการเก็บรักษา แสดงให้เห็นว่าเมื่อเพิ่มปริมาณเอนแคปซูลสูงสุดจะสามารถชะลอการเกิดปฏิกิริยาการเหม็นหืน (lipid peroxidation) ได้ดีที่สุด อีกทั้งไม่พบการปนเปื้อนจุลินทรีย์ในสัปดาห์สุดท้าย ผลการศึกษานี้แสดงให้เห็นถึงศักยภาพของการใช้น้ำมันหอมระเหยเปลือกส้มสายน้ำผึ้งอบแห้งในรูปแบบเอนแคปซูเลชันในการพัฒนาผลิตภัณฑ์คุกกี้
